• 1 large potato
  • 1 large capsicum
  • 2 carrots
  • 10 tendlis
  • 1 large beet root
  • 10 french beans
  • 1 teaspoon chilli powder (red pepper)
  • 1 tablespoon coriander powder
  • ½ teaspoon roasted cumin powder
  • ½ teaspoon ajwain (carrom seeds)
  • 1 teaspoon cumin seeds (jeera)
  • 1 teaspoon sugar
  • 1 teaspoon fresh lime juice
  • 3 tablespoon besan (chickpea flour)
  • 2 tablespoon oil

Vegetable Chiri Miri is a rare combination of colourful vegetables with a dash of aromatic mild spices that tingle your tastebuds and give a sumptuous and nutritious meal. It is generally rolled with rotis, chapathis, nans, parathas and other breads.

 

METHOD:

  1. Cut all the vegetables equally into 1 ½ inch fingers. Parboil them (except capsicum) with a pinch of salt. The vegetables should remain crisp.
  2. Dry roast besan well till it gives a nice aroma. Keep it aside.
  3. Heat oil, add jeera and allow it to splutter. Then add ajwain.
  4. Now add all the boiled vegetables, capsicum and fry on a high flame for 5 minutes.
  5. Add coriander powder, cumin powder, chilli powder, sugar and a pinch of salt. (remember vegetable are boiled with salt so add just enough)
  6. Add the roasted besan and fry well. You can add 1 teaspoon of water if the dish turns too dry. Normally the vegetables give out its own water and hence additional water is usually not necessary.
  7. Sprinkle lemon juice & garnish with coriander.
