• ¼ Kg red pumpkin 1 onion chopped finely 2 green chillies broken into 2 pieces 1 teaspoon of grated jaggery 1 /2 tablespoon tamarind pulp 1 tablespoon coconut grated Salt to taste Coriander leaves for garnishing

This yellow colored vegetable is rich in vitamin A and is excellent for your skin. Pumpkin bharta is prepared without oil  thus it is very healthy.

METHOD:

  1. Peel the skin of the pumpkin and cut it into small pieces. Place the pieces in a vessel. Add salt and jaggery to it and pressure cook till 2 whistles.
  2. Mash the pieces the pieces well to form a smooth paste with a spoon.
  3. Now and green chillies, tamarind pulp, chopped onion and grated coconut.
  4. Garnish with coriander leaves.
