• 1 large bunch of palak(spinach) 3 green chillies (pepper) ½ inch ginger 7 cloves of garlic 2 tablespoon cream 200gms paneer (Cottage Cheese) 1 teaspoon cumin seeds (jeera) 1 tablespoon lemon juice 1 teaspoon roasted jeera powder A pinch of sugar Salt to taste

Spinach curry with cottage cheese cubes is a tasty meal originating in the north of India and has gain popularity all over the world. This “Palak Paneer” recipe is influenced by the tradional Punjabi cuisine which uses pureed spinach instead of whole leaves. Amongst green leafy vegetable spinach is the most versatile in both eastern and western cuisine. As Popeye the sailor knows-spinach is rich in nutrients such as potassium, calcium, magnesium and iron. Better than any tonic to increase your level of Haemoglobin in case of Anaemia. The cottage cheese provides the additional fortification of Calcium as well as Vitamin D.


METHOD:

  1. Blanche the palak leaves (spinach) in hot water for 2 minutes and then put them in cold water to refresh them (this helps in retaining the green color).
  2. Grind the palak leaves with ginger and the green chillies to a smooth paste.
  3. Heat the oil in a pan.
  4. Add the cumin seeds (jeera ) and allow them to splutter.
  5. Add finely chopped garlic and fry it for 2 minutes.
  6. Add the palak puree, salt and sugar.
  7. Fry the paneer (cottage cheese) pieces in oil till golden.
  8. Drop them in a cup of cold water and squeeze off the excess water. (This makes the paneer soft).
  9. Add the paneer to the palak dish.
  10. Garnish with cream.
  11. Serve the palak paneer hot with roti or paratha.
