• 250gms white radish grated 3 tender leaves alongwith stalk of radish 500gms thick curd (yoghurt) 1 teaspoon salt 1 teaspoon sugar 1 teaspoon green chillies chopped (green peppers) 7 chopped walnuts 1 teaspoon jeera powder

Raita is a salad accompaniment for meals and this one is made with Mooli/ radish, a fresh crisp salad made in “dahi” (yoghurt- not sweetened). This one is a style made in the far north state of Kashmir and is generously sprinkled with walnuts which are a speciality of the Kashmir region.

METHOD:

  1. Place the grated radish on a muslin cloth and squeeze out the excess water and keep aside.
  2. In a bowl wisk yoghurt with salt and sugar. Add the radish and finely chopped radish leaves alongwith stalk, green chillies, chopped walnuts & jeera powder. Mix well.
  3. Garnish with a dollop of cream is optional.
