• Grated Lauki (bottle gourd) 1 cup
  • Wheat flour 1 cup
  • Maida 1 cup
  • Green chilli finely chopped 1
  • Jeera powder ½ tsp
  • Carom seeds ½ tsp
  • Coriander leaves finely chopped ¼ cup
  • Oil 1 tbsp
  • Turmeric powder 1 tsp
  • Grated ginger 1 tsp
  • Salt to taste
  • Ghee

Stuffed Indian bread using grated bottle gourd (Lauki). A filling meal all by itself. Usually accompanied by a bowl of curd and/ or pickle (achar).


  1. Grate the lauki. Add salt and keep for sometime.
  2. Squeeze out the water that is generated by pressing between your palms.
  3. Add green chillies, jeera powder, carom seeds, little salt, turmeric powder and ginger and Mix well. Add coriander leaves to it too.
  4. Add both the flours to the lauki and knead well along with oil. Adjust the flour. You can add a little more wheat flour if it’s a little runny.
  5. Make small balls and roll to make round sheets of paratha.
  6. Place the rolled paratha on hot tava or griddle.
  7. Turn and roast on the other side.
  8. Spread ghee (purified butter).
  9. TIP: pressing of the edges of the paratha on the tava pan is very important to ensure the edges of the paratha are well cooked.

Enjoy the paratha with some plain curd (yoghurt) or vegetable raita or boondi raita or french bean raita. My kids love it with ketchup/ sauce and achar pickles.
