• ¼ Kg Beetroot 2 green chillies slit 1 teaspoon cumin seeds A pinch of asafetida (hing) 1 teaspoon lemon juice 1 teaspoon sesame seeds ¼ inch ginger cut into juliennes Salt to taste A pinch of sugar 1 tablespoon water

It is necessary to energise your meals with tasty vegetables and salads. Giving your family nutritionally richer meals that are deliciously different is responsibility of the mother. This colorful red vegetable can be eaten with chapati. Beetroot subji/ bhajiis as light as a salad and as filling as a main meal should be.

Beetroot is a rich source of nutrients and antioxidants including sodium, potassium, magnesium and Vitamin C as well as Betaine which is important for cardiovascular health.

METHOD:

  1. Skin the beetroot and cut into longish slices.
  2. Heat oil, add asafoetida and cumin seeds. Allow the cumin to splutter then add the ginger pieces and green chillies.
  3. Now add the beetroot pieces, 1 tablespoon water and cook the vegetable till done.
  4. Finally add salt to taste, sugar and lemon juice.
  5. Sprinkle the sesame seeds and stir.
  6. Garnish with coriander leaves.
