• 2 large potatoes
  • 1 cup besan (chick pea flour)
  • ¼ teaspoon ajwain
  • ¼ cup water
  • A pinch of turmeric
  • A pinch of soda bi carb
  • ¼ teaspoon chilli (red pepper) powder
  • Salt to taste
  • Oil for deep frying

These are deep fried snacks and extremely popular especially served hot during the heavy mosoon rain showers when its cold or during a really chill winter evening. It can really get your spirits up. All you health conscious friends would probably turn away at the mention of deep fried, but in moderate doses and when wiped dry with a tissue, they can be enjoyed by one and all. Really crisp snacks that are a great pep up mantra…………These Fritters or Pakoras or Bhajias are made from potatoes and are also used to create a fun snack called Bhaji Pao, a speciality of Mumbai city (potato fritters stuffed between a bread bun like a burger or vada pav). You can also get creative with other veggies like Onion (kanda/ pyaz)  fritters , capsicum (shimla mirch) fritters, Aubergines (brinjals/ egg plant/ baingan) fritters and cauliflower fritters.

METHOD:

  1. Cut the potatoes into thin roundels and apply salt to it. Keep it aside for 15 minutes.
  2. Make a thick paste of besan, ajwain, chilli powder, turmeric powder, salt and water. Add soda-bi-carb to it.
  3. Dip the potato slices in the batter and coat it well.
  4. Deep fry them in the oil till golden brown.
  5. Similarly you can make fritters using other vegetables such as onion frittersbrinjal fritters, cauliflower fritters and capsicum fritters.
